If you can afford it, you should only get the 16GB model. Numerous outlets have shown that the performance gap between the 8GB and 16GB models is huge.
The RTX 5060 Ti (16GB) is a great GPU for 1080p gaming. It outperforms the RTX 4060 Ti by about 20%, and the gap widens in games that support DLSS 4 technology with multi-frame generation. The 16GB of VRAM also allows this GPU to hold its own in 1440p gaming, especially if you don't want to spend the extra $200-$300 to upgrade to an RTX 5070.
