Taco Bell has teamed up with Portland-based ice cream maker Salt & Straw to launch a new dessert called the “Tacolate,” available nationwide starting October 3.
The Tacolate is built like a Choco Taco’s wilder cousin. A hand-pressed waffle cone forms the shell, packed with cinnamon ancho chili ice cream before being dipped in chocolate.
To top it off, customers get two Taco Bell–inspired sauce packets. But unlike the chain’s iconic fire or diablo sauces, these aren’t meant for burritos. The flavors are mango jalapeño and wildberry cinnamon, designed specifically to pair with the ice cream.
Salt & Straw first toyed with the idea back in 2016 at its Wiz Bang Bar spin-off, selling a soft serve taco that became a cult favorite. A brief revival in 2022 sold out instantly, catching the eye of Taco Bell CEO Sean Tresvant.

Now, after years of planning and plenty of test batches, the Tacolate is officially hitting menus. “It’s going to be the biggest engineering marvel in ice cream history,” Salt & Straw wrote on Instagram, announcing the collab.
Starting Friday, October 3, the Tacolate will be available at all Salt & Straw shops across the U.S. and can also be ordered online for nationwide delivery. For now, though, eager fans can join a waitlist to be sure they can get it when it launches.
The Tacolate joins a growing list of eyebrow-raising ice cream collabs in 2025. Carnival Cruise Line and Van Leeuwen made headlines in September with a sunscreen-flavored scoop.
